More than two centuries ago the first olive trees arrived in California with the Franciscan missionaries. Today, some of the best olive oils in the world come from California. Olive oil is quickly joining wine as one the state’s world-class agricultural offerings. Production is projected to rise another 30 percent this year. But, that is still a “drop in the bucket” compared to the potential.
The health benefits of olives are even more impressive due to their high content of mono-unsaturated fatty acids and anti-oxidative substances. Studies have shown that people who consume 25 milliliters – about 2 tablespoons – of virgin olive oil daily for just one (1) week showed less oxidation of LDL cholesterol (i.e. the bad stuff) and higher levels of antioxidant compounds, particularly phenols, in the blood. Plus, Spanish researchers suggest that including olive oil in your diet may also offer benefits in terms of colon cancer prevention. Olive oil is clearly one of the good oils.
